Can someone explain the difference between the model listed, and this one (other than color):

The Almar site was not very clear for me to see what the handle composition is that dictates the higher price.

The one you listed on the KnifeCenter website is not a ZDP-189 laminate blade, just AUS 8. That alone would result in the price increase.

The ZDP-189 core on this blade. More expensive, harder steel.
