A flat bottom allows foods to brown evenly, while the flared sides make it easy to toss and turn. Because the base is bonded with stainless steel, the pan is induction compatible, too—in addition to being compatible with all other types of cooktops. If you need more moisture in a given recipe, tack the included glass lid on top of the pan.
