Traditionally, a Japanese Nakiri knife has a rectangular shape, but Apogee Culinary Designs has added a little twist to this particular Nakiri by upsweeping the tip of the knife so that it glides smoothly on a cutting board. Apogee’s Dragon Fire knives feature a slim profile with a 2.5-millimeter-thick blade, making them easy to maneuver. Each knife has a nitrogen-enriched American BD1N steel blade with a Rockwell hardness of 63 to maintain its edge. Ergonomically crafted from FDA-approved resin and linen micarta, the handle is smooth and grippy, and held together with a stainless steel end cap. With its wide blade and clipped tip, the nakiri can be used for slicing, mincing, and chopping vegetables efficiently.
