I've been using this knife for over a year now as my primary knife and it has been exceptional. The BD1N holds an edge forever and the workmanship by Yaxell is amazing as expected. Has been easy to sharpen in my experience with DMT diamond plates strops easily too with green compound.
It cuts and feels as good as it looks and it looks great! Two chefs I know that have knife collections in the thousands of $$ and are extremely particular about their knives both thought it was a great knife and said they would use it. A great addition to my kitchen.
My go-to knife in the kitchen. Incredibly sharp and holds its edge so well. Feels good in the hand, solid but not heavy, well balanced. Looks damn sexy, too. Many guests who have come into my kitchen is drawn to it and ask where I got it from.
Fantastic knife. Fairly sharp out of the box. Chops through vegetables like nobody's business. At first i was worried because I thought that choking up on the heel would be uncomfortable due to the partial bolster and fairly sharp edged corners ... but that wasn't a big problem for me.
The 2 things I loved most about this knife? 1. The balance is amazing for push-action cutting. 2. The grain of the steel as you slice - it has great feedback.
Oh yeah ... the handle is beautiful, too!
Now, that's a KNIFE. OMG, immediate demotion to my other nakiri knives and nakiris are my favorite knives, given that I am purely a plant-based cook. In any case this one has them all beat. It is in a class of its own for sharpness out-of-the-box. Spectacular, and I always like the feel of the BD1N steel.
