This looks great for herbs and can probably cut a chicken in half with enough effort, but I'm not sure it can break thicker bones (e.g. 6mm). I have a Shun DM7240 and you can see the handles are set further back for more leverage, plus it's 9 inches compared to Apogee's 7.5 inches. Also note the bone notch, which Apogee does not have. But for the price difference, it's worth a shot.

Hard to tell from the pics, but are these serrated right on the cutting edge on the one side? Or are the serrations offset from the sheer edge and only meant for griping the food, not cutting it?
Also, I see no pics from the back side either here or on your site. Is the pivot point at all adjustable if these loosen up over time?
Mine arrived in Australia a few weeks ago and I'm extremely happy with the purchase. They pull apart very easily for cleaning and are very well thought out. I especially like that one of the blades has very slight "serrations" which grip the food ensuring that it doesn't slip. 10/10.
dan_bRegardless if it's seratted or not, just FYI: Serrated edges can be sharpened. Been sharpening the same bread knife for 20 years so it cuts like new. You want something with an edge or round on the scalloped side and then a regular flat stone or whatever for the other (flat) side. You can look up YouTube videos. Spyderco's probably the easiest method, it's already at the correct angle.
