What's the difference in sound signature between the Pros and the Music line? Their online shop has some information, but I have to accept that most of that is just marketing.

The biggest difference is that Music Series is not about accuracy, it won't be showing you badly recorded material, its signature is focused around emotions, fun, toe-tapping etc. Music series is simply for enjoying music as is.
Pro330 is all about accuracy. It has decent speed for low frequencies, sweet, lush mids and precise highs that will reveal poor mastering.
