How would the DV336 work with Hifiman Edition X v2 (25ohm)?

It wouldn't work very well with it. Planars don't have much if any impedance swing, and at 25 ohms the sucker demands current. Don't get a DV for planars as it won't power it properly. If you have higher impedance headphones then there is no reason not to also try the Edition X on it for fun but this shouldn't be considered if you only own low-impedance headphones.

Thanks for your answer . I don't risk damaging either the amp or the headphones if I'll keep the volume at low levels ?

No but again, don't bother getting this unless you have a headphone that can actually run off tubes properly. Otherwise, yeah, you can safely use low impedance cans, just don't expect them to be properly powered. As a general rule start with the volume knob all the way down and find your max comfortable volume, carefully, from that point.

I've actually already ordered this amp. Got some 250 ohm Beyerdynamics and 600 ohm Sennheisers but was just wondering if I can use the DV336 with my low impedance cans also. You've answered my question, thanks :)

Wait, just saw your response, what pair of Sennheisers are rated for 600 ohms? Also the 600 ohm beyers (990 prem specifically) would've been best; the only exception being the 1990 pro which only comes in 250 ohm.
