Can anyone recommend (and link) good replacement tubes for pairing with the Fostex TH-X00 and Sennheiser HD 6XX? Would the stock tubes be best?

Don't know about the Fostex but for the HD6xx I'd say go for the GE 6SN7GT to start with. If you can, change the 6AS7 power tubes too as the stock ones are not the best. But if you are on a budget, it's passable for the time being. I bought most of my tubes from VIVATubes in ebay. You'll find a tube that's been tested and ready to roll.

I recommend RCA 6AS7G JAN version, for power tube, this valve is very good, so powerfull and generic tone. I buy my RCA JAN CRC-6AS7G for 55 Euro. I bought it from this site: http://www.nostubestore.com/. This man have a lot of russian tubes and some USA at good price.
EDIT: NOS tubes are the best.

The tung sol tubes I have tried have all had a bit of a hum but with music up you do not notice it, it sounds incredible for acoustics.
I also have used a few https://www.tubedepot.com/products/rca-6sn7gt-gtb-black-plate and they have all hummed less than the tung sol or no hum at all, but for my tastes do not sound as good as the tung sol.
Really it doesn't only come down to what tube sounds good with what headphone, you have to know what you liked and find a combo that compliments that. Below is a link with a very good review of different 6sn7-gt tubes
