How do these compare to the other Yaxell knives (Gou/Ran/etc.)
Also why are these not listed on Yaxell's global products page? (http://www.yaxell.co.jp/global/products/index.html)
RS84They are not listed because Dragon is designed by and manufactured exclusively for Apogee culinary. YAXELL does distribute them for me in Europe. As far as quality, they are equal as far as skill and construction are concerned. However with regards, to how they will hold up, Dragons aren't as pretty, but they are much tougher. That is because the are made from heavier stock, and one piece construction.

Deaomega1214How much does the manufacturing process vary to the rest of the Yaxell knives though. It doesn't go through their usual process of being made by many different powdered layers because it doesn't present the Damascus pattern. Is this just a single piece machined knife? Is it folded?
Deaomega1214The handle is exactly the same as their Super Gough. The difference is the blade. Super Gough is a layered steel with an SG2 core. SG2 is one of the best cutlery steels in the world. However like all layered steel knives it must be taken care of, or you can chip it. Dragon is one piece construction that started with blade stock that is 25% thicker. It is a much stronger knife and is specifically designed for abuse. The BD1 steel seems to have much greater edge retention, and we have never seen one chip.

RS84Yes, this is their European catalog. As I said the sell it for me in a Europe. I actually wrote their copy for them.

Deaomega1214Can you allow shipping to Iceland? The rules regarding knives shipments is not strict nor is it an issue , I have checked this morning with customs.
