I have a Drop ALT low profile, will my existing PCB be able to be swapped into this case?

Yes, the ALT PCBa is compatible with all of the ALT cases, low or high profile, anodized or ceramic coated.
Since you have a Drop branded ALT, you don't need a new diffuser either, just the case itself.

I'm assuming the LED diffuser off the regular low profile ALT will fit this case as well?

Yea exactly the same. The diffuser that comes in the high profile even has the cutouts for the steel pads for the magnetic feet on the low profile.

What is the ceramic coating? Are these just anodized aluminum? Cerakote, or something else?
