There is a pair that is ever so slightly dished. The key caps are a bit flatter than what you're probably used to. So keep that in mind.

What does it mean that these are dye sublimated?

It means that the letters are carved into the keycap then the dye is put into the void. Essentially the letters will never wear out.

What is my option if I also need 1U "ctrl, fn, and win" keys? Do I need to buy the ortholinear as well?

does the height of these keys change on the different rows or can the keys be swapped around to different rows without issue?

Like dsa, all the rows have the same profile. So you can change it without any issues
