The 52100 is actually the least expensive and most common of the 3 steels here, the reason it costs a bit more then the stainless is because we have to bring it over from the US.
FKK1I just got a stainless chef knife from japan on my last trip and I want a carbon steel for my next knife. I mean its not worth it to me since I'm looking for carbon steel and that look. Thanks for the info.
FKK1I do believe its worth the retail price, I just always like a deal and hardly pay full price for stuff. But the quality and craftsmanship speak for themselves, great work
