The steel is SUS440B. (That is the Japanese equivalent of AISI 440B.)

Here are two thots
1. Virtually all recommendations that I have run across advise against buying a set. You will not use all of them. I purchased a set of Twin Signature some years ago. I have found this to be true.
2. I don't like the way these feel in hand. Please consider putting one in your hand before buying this.
My current kitchen knives are a Gihei nakiri (Blue#2) and Konosuke Gyuto (HD2) and several paring knives. I don't care for any of my paring knives. The TS is the best of the lot. I have a huge Tramontina as a beater.
