How do you do per-key RGB lighting on a Shift V2?
I saw the online configurator that lets you do this on the Shift V1, where it spits out a compiled firmware file to flash. The V2 doesn't seem to have this function in the Windows configurator, though. I can't imagine the answer here is "you're going to have to manually write the hex for every key in QMK, compile it, and flash that".

The CM's bottom row is also nonstandard because of that so you'd have to figure out which mods pack(s) fit it, I have one set that I use with it and one set only for that reason, too much of a hassle to deck it out - someone more knowledgeable than I can maybe chime in with which you'd need. Alphas, modifiers, calculus and UK you'd need for sure though, the rest is what you'd be wary of.
For your keyboard (QFTK ISO) you will need the following kits:
Alphas of your choice + Modifiers + UK Kit + Calculus
EDIT: But have in mind that we don not offer a 6.5u space bar here.
You could also add Novelties if you want, but that's not essential.

Well I'm not a big fan of Topre but there are many people who really love the Novatouch (there's an ISO version, but I read somewhere that it was discontinued, perhaps somebody else could confirm this).
You'd need the same kit I mentioned prior, that's enough for all of the standard ISO full-size boards.

For what it's worth I believe every version of the NT are discontinued at this point unfortunately, as of every recently, not 100% though and I'm sure many physical/internet stores still have them in stock.
Yes, I believe it was discontinued and won't be making a comeback.
The QFTK has a 6.5u space bar which can't be manufactured in the SA profile, therefore Godspeed is not completely compatible with that keyboard.

Edit: Yea, haven't found a key map but looking at pictures it most definitely looks as though the Novatouch sports a fully standardized bottom row which is great, hopefully means future boards by CM rock the same layout.
