The flipping thing sounds pretty cool but unless it sends heat through the hinges to make both sides uniform...
when i flip it, when i'm using it as a pan, i'm going to lose some heat.
Probably best for things you don't need constant high heat. Or maybe warm up both sides first and flip often.
inifistI've owned one and both sides heat up fairly quickly once you put it on heat. I used it to flip dishes where one would want a thorough mix such as fried rice. It was great to use(:
