Sorry, i'm pretty new to mechanical keyboards. Do the SA profile caps still fit on Cherry MX stems? I'm wondering if the SA caps would work on my iKBC MF108.

Thel'MX' or 'Cherry MX' stems are all the same across the board. Among mechanical keyboards, you're really only going to find MX, Topre, or ALPS/Matias stems.
The difference is how the keys fit alongside your existing keycap set. SA R3 is the flattest of the SA rows, which is technically fine just about anywhere if you're using it to replace arrows or modifier keys. However, 'SA' keys are pretty different from OEM or Cherry profile keycaps. It might be a little weird looking unless you intend to just use it in places like the F-row or arrow keys.
