How much are the spouts lifted off the side of the pan? IE how much 'juice' can build up before it starts to spill out of the pan?

The spouts are lifted about half way up so a decent amount of liquid can be present without spilling out the sides. It's tough to see in the photos but the spout has a gradual slope to it and only acts as a drain if you tilt it.
