QMK documentation explains some of the stuff. (can be found here https://docs.qmk.fm/ and/or here https://github.com/qmk/qmk_firmware/tree/master/docs)
Haven't found an easy to follow tutorial that covers the mentioned features, yet. If you find one, let us know :)

Hey there!
I found this really promising tool, which basically is a graphical QMK configurator (as far as I understand) http://kbfirmware.com/
You can get the preset for the ergodox-layout from http://www.keyboard-layout-editor.com
I'm not shure if the wiring provided by the tool is correct, but it might be really cool tool. At least it has all the capabilities for the features you mentioned :)

Damn... you're right. Have forgotten about that.
Another unfortunate thing is that the tool (apparently?!) doesn't compile for the controller used by the Infinity. But at least there would be the possibility to download the code as .zip and learn a bit of QMK, I guess...

In what programming language is the QMK software written? C++/C/C# or something else?

If you follow the link for kbfirmware.com there is a contribution link to their github so you can browse their source. https://github.com/ruiqimao/qmkbuilder
If you mean the QMK firmware the link to that github was up farther in the thread https://github.com/qmk/qmk_firmware
I assume you want something more advanced than the normal cofigurator from input club https://configurator.inputclub.com/
Does KLL allow you to interface with the LCD?
I'm not a microcontroller kinda guy but did you check the datasheet for the newhaven LCD? http://www.newhavendisplay.com/specs/NHD-C12832A1Z-FSRGB-FBW-3V.pdf
