Anyone know if it would be possible to sauter a USB C connector to the gen 2 board?

Its possible but as HaaTa mentioned previously it won't be very robust. The USB 3.0 connector they used only had two tiny attachment points which is why they had to start epoxying the connection from the factory so they wouldn't come off and stop the keyboard from working.
