I'm still trying to decide on what switches and whether to get keycaps. Can I still change my settings after the drop ends tomorrow?

Probably not; when a drop ends, thy submit their order.
If you are entirely unsure, I would just order without switches and get them elsewhere when you know what you want. A couple extra bucks is worth knowing you got the ones that will keep you happy.
