How does this stack up against 1CM thick baking steels that Modernist Cuisine recommends?
It is a completely different beast :) Baking steels are great for making pizza in an oven, but with IRONATE, you can make one without an oven. You can still use the lid as a baking steel. Aprox. 1/4" thickness will store enough energy to make a really nice crust and because it is much smaller than full 1cm thick griddle it will take less time to preheat. Use use 1/4 inch baking steel here at IRONATE for testing and it takes at least 45 minutes to preheat.
But the point of IRONATE is, that it eliminates an oven altogether and shortens preheating to a minimum.
