Couldn't I just flip my cast iron skillet upside down and get the same effect, while saving more than a hundred dollars?

TeamrayrayTeamrayray, you could experiment with cast iron skillets. This is how we got the idea for IRONATE and first versions were not much more than 2 cast iron skillets. It can be done, but I found out it is easier to turn on an oven than dealing with 2 hot skillets that don't fit together perfectly. You need to heat up 2 skillets on 2 hobs/burners. Skillets have to be the right size, so the top one sits at the right height and the gap between skillets have to be minimal for this to work.
There are also differences in the material (carbon steel vs cast iron) and in the thickness of the walls. IRONATE has a bottom as thick as cast iron skillet. That ensures maximum accumulation of heat. But it has thinner walls, which makes them heat up faster, making the edge crunchier.
