It would be awesome if you are selling Japanese knives in the future if you included a left handed option.

"Left handed" in a knife usually only applies if it has a scalloped blade, like a bread knife. The flat side (not scalloped) of the blade usually faces the hand not holding the knife. Santoku and paring knives are generally for either hand.
Actually left handed knives apply to knives that have a single bevel edge -like many Japanese knives. Western style knives with a double bevel edge can be used equally well by anyone. The other thing to consider is what handle shape it has. If it is a "chesnut" handle then the feel is different. As a left-handed person I prefer a left-handed chesnut shaped handle. Perhaps this knife is western style. It's not indicated in the product description.
You are right. A knife with a scalloped edge is usually single beveled edge. I'm a lefty too, but have learned to live with my "righty" knives. It will be interesting to see if these have a western or Japanese bevel.
Santoku are commonly double-beveled knives. Handedness shouldn't be an issue.
Santoku is a knife style, and so all santokus are double bevel. Same for pettys, gyutos, nakiri, etc.
Single bevel knives would be a deba, yanagiba, usuba, kiritsuke, and others.
There are even quasi-single bevel knives like a honesuki.
Thanks for the info. Most of my knives are double bevel western style so I am not as familiar with the different Japanese styles. As a left-handed person western style seems to be the safe zone. I do have a left-handed knife with a chestnut shaped handle that I like. Hopefully your info helps others who are considering this knife.
