KitchenbeeAny time a pan says it will require "seasoning", it's a safe assumption that there isn't any kind of anti-stick coating.

KitchenbeeYes carbon steel is perfectly healthy. It's just a purer form of steel than your regular stainless.

Comments over at amazon do not inspire confidence. More than one account of the handles simply shearing off due to very cheap riveting material, resulting in spills of boiling hot water, hot oil, etc. I don't have personal experience, but that is enough to keep me from buying this wok.

botanner007It works fine on electric, but the sides don't get as hot as you do with a gas range, so overall it cooks less efficiently on electric.

Can the seasoning be sealed in the oven. I'd imagine the handles wouldn't hold at the temperature.

kiddYou don't actually have to season it. You can just use it. People get all hung up about caring for carbon steel and cast iron from reading internet forums, but in reality, it's just a hunk of steel. You don't need to baby it, just use it. It will season itself over time, and even if it doesn't, there isn't much difference in performance, depending on how you use it. It will never be like teflon.

After tax, the Amazon 14" would cost me $37.64 (as of 5/11/17) while this one here is $31.99 all in.
Not cheaper for me, but maybe worth it if you want it faster.

Am I correct in assuming any carbon steel is without a nonstick coating?

mjdobsoncorrect. you season it like you would cast iron and it develops a non stick coating through use. Deep frying in it really helps develop this coating!

mjdobsonNot "any", but yes this one does not have a nonstick coating. It does have a protective coating to prevent scratches while shipping that is easily removed (you boil water in it and then wash it according to the instruction booklet).
I got the nonstick version of this from MD a couple weeks ago and it is also carbon steel. (I'm also quite happy with it.)
