can this be used a kitchen knife that will not see outside world? I am worried about the effect of water on the handle and will sharpening later remove the black coating? Can someone with prior experience using these please help me with these questions?

KartWell the handle is leather washers with a oiled finish applied, yes you can wash it but don't go sticking the knife in your dishwasher, sharpening will not remove the coating *if* done properly.

KartThe black coating is pretty sacrificial, it comes off with normal woods use. Probably not in the kitchen, though. As sharpening goes, you'll remove only as much coating as you remove metal if you need to pull the edge back or reduce the edge angle... I think you'd find this knife VERY thick to use in the kitchen, it's not a thin profile very high flat grind like a kitchen knife either.
