it says corrosion resistant, would it handle salt-water environments pretty well? I don't really know much about Sandvik and their steels, though I intend to do some research since I've still got 8 days! :)

l2yuk3n14C28N is pretty rust-resistant although Kershaw's bead blast is still prone to rust spots in moist environments. I would suggest wiping/coating the blade in oil before storing it.
If the knife is going to be exposed to salt water, I'd suggest a knife with X1 steel (Spyderco Salt series) or X15-TN (Benchmade).
