I managed to turn the lightbar off and I can't turn it back on I've tried holding the volume knob down for multiple seconds and nothing happens

This may be because the cover plate of the pickup light is tilted up, and the design of the pickup light is detachable. You can flatten the cover plate of the pickup light or remove it and reinstall it again.

Mac version ?
why is it in general so hard to get mac - win - linux keymappings that work out of the box for keyboards ? this seems like an issue that should have been solved like an age ago.

Windows holds like 75% of the desktop market. They'll save shitloads of money sticking to windows only.
Plus, there's all sorts of keycaps that have the mac symbols. You'd just have to switch them out
