Container isn't even a gallon. I'd be interested in a new brewing vessel, but only 1.5 gallon to 2 gallon. Nothing smaller than 1.5 gallons.

In addition to the question raised by 'shlush' above, I am also wondering why the jars do not have lids? The dispenser does not need a lid at all if it is to be made for 'continuous brew' , which I find can actually become way too acidic over time, but the second ferment WILL require a lid in order to get that 'fizz'. I am also concerned with the yeast strands clogging up the spigot as well. Seems it could be a bit difficult to have to keep that clean. Otherwise, I LOVE seeing more products designed for fermentation, and love making Kombucha!

RainyHYes I agree with your statement. It happened to one of my dispenser's spigot where the yeast strands ACTUALLY got stuck and it took me about 30 minutes to clear it out. :( This is actually a good idea but the design needs thinking through.

Continuous brew kombucha is pretty easy and can be rewarding once you figure out your preferences and brewing pace. That said, there are a few things I would want clarified before I would grab this -
* is the spigot plastic with metal paint over it? If so, the acidity of the kombucha may eat away at the coating after a few brews. If it's food grade plastic it should be fine. Replacing the spigot with a stainless steel one is usually recommended.
* the muslin squares need to have a finer mesh/weave than standard cheesecloth or it will not stop fruit flies from getting in. I just use a cotton shirt or cloth.
