"When used as a hammock, the spreader bar and arch-pole system help keep the bed taut to avoid the 'cocoon' effect common to many hammocks."
Spreader-bar hammocks are terrible. You can't lie flat on them. They're also prone to tipping over and depositing you uncerimoniously on the ground, so you need to guy-line the corners.
The way to avoid the "cocoon effect" is to use a normal gathered-end hammock and lie at an angle, Brazilian style. If the hammock is the right size for your body, you can get a perfectly flat lie.
CloacaTo each their own, but we get emails all the time from customers who previously used gathered-end hammocks and rave about how much more comfortable they are and how much better they slept in their Lawson due to the flatter surface created by the spreader bars/arch poles. I personally used gathered-end hammocks before (still do for just hanging out sometimes, but not for overnight) and was never comfortable, even when laying "brazilian style" which is one of the reasons we designed our tent hammock. You can lie very flat in the Lawson Hammock and laying at a diagonal is an option too. It's much flatter than a gathered-end even if at a diagonal. You have the option of tying/staking the corners if wanted as there are loops for tie offs on the corners, but it's typically not necessary unless it just makes the user feel more comfortable. If used to a gathered-end it will feel much different at first and can take a couple times to get used to it, but it's very stable. .

CloacaWhich ones have you tried? I've used a Warbonnet Ridgerunner and a REI Quarter Dome and hsd absolutely no problems. I love bridge hammocks.

CloacaI am a long time gathered end hammock user..and just got my first bridge hammock, a ridgerunner. Never going back. It is wonderful. It is so flat i can sleep on my belly. I cant speak to the Lawson....but a ridgerunner is guilty of none of the issues you describe.
