Making fresh pasta is a lot of fun and totally worth the effort—that is, of course, if you have the Marcato Atlas 150 pasta machine. Designed to take out the legwork involved in making pasta by hand (like rolling, kneading, and shaping), the Atlas 150 helps you achieve uniform thickness in a wide range of shapes. To use it, make your dough, feed it through the machine, and crank the wheel. After feeding it through a few times, the dough will be much thinner and easier to work with. Once that’s done, move the crank, select a shape, and feed it through again. The Atlas 150 allows you to choose from three different shapes, and there are tons of accessories (some of which are available here) if you want to try out new shapes.
