Just got mine in today and notice right away compared to my ad500x that they have less bass, less treble, and less volume. It sounds kinda muddled all together as well. Defect maybe? Or do they need time to burn in?

I've never heard the AD500x, but most of what you said dosen't surprise me. THe HD650/6XX are known for not having a more "relaxed treble" and bass that doesn't extend low. Three treble part doesn't bother me so much but the lack of bass extension does bother me.
Also the AD500x are 48ohms the HD6xx are 300ohms, so you should expect them to be harder to drive. It sounds like you not giving them enough power. You need a decent DAC/AMP to get the most out of these.
Even out of my NFB-11 which hs plent of power for most headphones I prefer severl of my other headphone over the HD600/650 line, becasue I like my sub bass. Many say these really shine with a tube AMP, but I haven't tried that yet, I hope to get one later in the year.

Less volume and less treble: this is what the headphones are. Less bass: These headphones should produce alot of bass and very good bass. Maybe your ad 500x produce overbloated bass.
