For gaming and watching YouTube should I get these or the HD 58X?

These and a mod mic/massdrops mic if you can afford it. Not sure how different open/closed back would be for games like cego when you need to hear footsteps

The 58x and 6xx are incredibly similar. I would say get the 58x as they are easier to drive (although neither is particularly difficult) and are $50 cheaper. Also they have more bass to them so you will "feel" the game more.

I've read that modding the HD 58X by removing the foam (super easy to do, and reversable) opens up the soundstage to be pretty comparable to the HD 6XX.

?? from what i heard the 58xj has a wider soundstage than the 6xx!
but it depends on you, the 58x is a more bassy headphone good for thumping bass where the 6xx is a more rumbly bass. You'd want to get the 6xx if you like listening to orchestras and mid-centric bass-light music.
but you really cant go wrong with either one. the 6xx also has better overall performance when properly amped imo, but harder to drive without

I think the cans you're thinking of are the Sennheiser HD 660, not the HD 6xx/650. Both the HD 58x and the HD 660 have the new 150 ohm drivers. However, someone did a frequency response curve of the HD 58x with and without that foam pad removal mod and found virtually no difference.
I had the 6xx's. I liked them a lot, but I sold them when I got the HD 58x. I like the HD 58x better. It's just a lot less fussy to get decent sound out of.
