I’ve personally had good luck using Spyderco’s Tri-Angle Sharpmaker. I use that system for everything from pocket knives to kitchen knives.

It’s a small tab on the back of the blade that protrudes through the back of the handle when the knife is closed. When pressure is applied to this tab, sufficient enough to overcome the pressure of the detention holding the blade in the closed position, the blade flips open.
