Sorry if this is listed elsewhere, but are the diameters listed for the three different pan sizes referring to the diameter of the cooking surface - or the largest diameter found at the top of the bevel? Thanks.

Eric.n.whalenThe listed diameters are for the full pan across the top.
For example, my 10" pan has a bottom cooking surface diameter of 7.5"
The 12" pan would be about 9" across the bottom

tonyp063I guess that measuring convention is pretty standard for most pans.
