Matfer’s Bourgeat collection is made with copper exteriors and nonreactive stainless steel interiors that won’t impart any flavor. Compatible with virtually all heat sources (minus induction), the pans are a great complement to most kitchen ranges. They come in two different sizes and are fitted with cast iron handles that won’t overheat.
