Can you please be specific about the models being offered? From the pic, it looks like the Mauviel M250C Copper Curved Splayed Sauté Pan. This pan usually comes with a lid. Can you confirm this?

kingcomanche666This is a sauteuse. What I learned many years ago when I bought mine was that they're intended for reductions, which accounts for the splayed sides--it increased the area of the liquid subject to evaporation, which helps speed up the process. A lid would be contrary to what I believe was its intended purpose, although differing cooking practices over time may have altered assumptions and support the need for a lid.
