The GX87S is not QMK/VIA compatible. Instead, MCHOSE uses their own firmware called MCHOSE HUB, where you can manage and configure their brand devices.

I see that this comes with a switch puller and spare switches. Does this keyboard allow you to swap the switches?

Yes, the PCB is a hotswap PCB, so you won't be forced to use the switches that come with the board if you have some MX style switches laying around.
