Alright, I did a little bit more research. Turns out you can indeed use LED on the Matias switches, you just need SMD LED which fit into the hole reserved for the MX stem. This looks like annoying and error-prone work, though, so if somebody knows of a better way, I'm all ears.
I'd still like to know if we get all keycaps shown here regardless of the chosen layout.

I'd like to order the arrow layout, but instead of using the arrows I'd use it as one more modifier in the bottom row.
