Love this keyboard but miss the minus key on the numpad. Wondering - is there a way to press and hold the large PLUS key and have it be a minus key? Better yet would be a version with 2 small keys for (+) and (-) instead of the large plus key...
I realize i can program the FN plus (+) to be a minus key but that ends up being a two handed keystroke so not ideal for my situation...

You should be able to reprogram the keyboard so that the Del key is (-) which is in the standard location, and then you can change the Ins key to Del. This would make for a more standard key layout. I'm sure you can find a guide on how to reprogram the board with QMK.
Just reprogram via QMK. The stock layout is meh. Check my review, I have a precompiled firmware which changes that layout pretty much to what you're talking about. My review has photos of my layout, and a link to the firmware in the comments.
I have the melody96 which uses the same pcb. You can flash via on it to make changing layout easily.
