pbeinc25It depends on the size of the steaks, but approximately 4 steaks or 2.5 pounds of meat. The key is to make sure that the steaks are completely immersed in the water so the heat can circulate evenly.
SV18It sounds like you're hardly trying haha. I have probably overstuffed it, but I've put about 12-14 lbs of brisket in including using the tray it comes with... and if you really have a tough fit, I use cooking twine to tie down the meat and keep it below the "maximum" water line. Mind you this is for much longer periods of time (30 hours @155 degrees) - so the fact that it is as if you are cooking one huge hunk of meat isn't such a big deal.
