I've owned the 4Qt version of this pan for sometime, and it is my favorite pan of them all. To me, not all non-stick stands up as well as it should, but this one does. I typically start with caramelizing chopped onions, first for 5 minutes at 425F dry and without stirring them, then another 5 minutes at 425F while stirring them and adding a a few splashes of veggie stock if needed to liquify. After six months in daily use, it still works just as well as it did the first day.
