The SharpEdge Etsu Village—which refers to a region of Japanese cities renowned for their knifemaking prowess—sports a gorgeous Damascus blade made of VG-1 steel. Hardened to 60 on the Rockwell scale, it takes a great edge and holds up, cut after cut. The top of the blade is left unpolished to prevent food from sticking to the blade (which is rare, given its 1.8-millimeter thickness). The traditional Japanese Wa handle is crafted from walnut wood for a comfy hold. Lightweight in design, it moves the balance of the knife toward the tip for excellent control.
