That's a great-looking knife. If I hadn't already bought a Santoku (from a recent trip to Japan), I'd probably be in on this drop. In terms of the tang - I went to some of the most reputable knife shops in Kyoto and Tokyo, and it seemed that most of their high-end blades on display (which didn't have handles on them yet) were 2/3 or similar. I'm not an expert in this area though (I know just enough to pretend I know what I'm talking about with my colleagues, ha ha).

Does the tang go all the way through the handle!

Lol some people around here would take even a question like that to be some sort of insinuation that you're wrong, or make assumptions that I was trying to current your opinion, so I was being overly cautious 😅 Thanks for appeasing my curiosity. I have fewer years of experience, but have had more issues with gaps opening between scales on full tang knives than I've had with hidden tang myself

Wow. Way cool. I have a santoku, Twin Signature. I am moving away from the German knives to the Japanese. I need to get a high class sharpening system, probably an Edge Pro 4. Then a Japanese santoku will be in my sights.
14themoneyGreat to hear that! Keep your German knives for some more rougher tasks, as Japanese are more sensitive.. If you will ever give the old whetstones a try, we made a detailed video guide for knife sharpening with whetstones: sharpedgeshop.com/sharpening. Cheers!

@sharpedge Any more details on this one? Or better pics? -Can't see the Damascus in the pics provided... Do we assume it's a VG1 core with Damascus cladding? Or Damascus through and through? -if solid Damascus, what other steel is used? -is that handle oval, octagonal, D shaped? -ferrule material?
