So if I select one knife, it adds the "additional cost" for that knife to the base of $119.99, effectively making the cost of ONE knife upwards of $200.00. One VG-10 chef knife is not worth $200.00 unless it's a renowned brand. What am I missing?

zermatt_951HI! I work for Korin and I hope I can answer your question.
Over the years, Korin has worked with many Japanese knife makers (Misono, Suisin, Nenohi, etc). In addition, Chiharu Sugai, our resident knife master, has spent years learning the nuances of steel, knife design and construction, from Shozo Mizuyama, the premier knife sharpener in Japan. We took those connections, experience, and input from the world-renowned chefs to create the Togiharu line as our house brand.
The main reason why you may not have heard about Korin or Togiharu is because we don't advertise much to the general public, but if you'd like, you can read some of the chef interviews we have done to see how they feel about us. http://updates.korin.com/bl/chef-interviews/
