Anyone have experience with these blades? I cant find any reviews at all online.

jcs92Togiharu is Korin's in-house brand I believe. Korin's a really nice knife/kitchen-supply store based in NYC. They collaborated w/a Japanese knife maker for the Togiharu line. While I don't have this VG-10, I've had an 8" gyutou from their G1 line as my standard kitchen knife for 6 years now and it's worked just fine. I should actually bring it in to Korin to fix a nick & resharpen but I like it quite a lot.

jcs92I've been in the restaurant industry for 15 years now and have had a Togiharu for the last 8. I used it on a daily basis until I replaced it with a Misono UX10. The Togiharu's are relatively easy to sharpen and hold an edge well. Korin has fixed a few tips for me in the past from knives being knocked off counters. They do an excellent job and get the knives back to you quickly. Check out their page and pick up a saya to cover that new blade!
