Can I switch between speakers and headphones while the headphones are plugged in? Thanks!

Yes! You can switch between headphones and the line outputs with the included remote or by double pressing the volume knob while headphones are still plugged into the front. Audio will only play through the headphones or the line outputs though, not both at the same time. I've had an EX5 for almost a year now, amazing DAC/amp combo. Especially at this price.

Is the Bluetooth function for transmitting to a Bluetooth listening device, like AirPods, or does this amp function as a receiver for an incoming Bluetooth signal that is then converted to a wired listening device like a pair of headphones?

It's just a bluetooth reciever, no functionality for transmitting to wireless speakers or headphones

The output impedance figure must be wrong? How can a headphone amp with 200 ohms output impedance drive anything well?! The headphone would have to have an impedance of about 1600 ohms to work well!
Edit: this model has >0.1 Ω output impedance It could be a typo, we’ll check. However, before a certain person started stating the “1/8th rule,” it was in fact common for home integrated amps (like an Audio Video Receivers) to have speaker taps and a headphone out adapted from the speaker amp with resistors, with an output impedance around 200-220 Ω. Looking a little deeper, output impedance can be a problem when headphones have crossovers (like in multi-BA IEMs) or a non-linear impedance curve. Even with non-linear impedance headphones, some people enjoy the warmth and bit of bloom from a higher output Ω. That said, this probably is a typo.

Does this unit run with 220V?

This is purely an estimate, but majority of power supplies are switchable, mostly automatic. Which plug is included is another question. I have a DX5 which has an external power supply, that is switching, which was included in the box.
