Anyone have one of these? How is the stability? Does it bounce, flex or move in any way when typing?

I have one of these. When I'm typing up a storm yes. If I'm cognitive and not mashing away at the keys it is stable. One of my coworkers at another facility had the more expensive humanscale tray and it did feel a bit more steady. There is also some flex when resting on the mousepad. For the price I love it.
