What would be the best way of washing these? And would they rust

AitheyYou should take them apart and wash them properly after each use with something non-abrasive, and allow them to dry completely (in separate pieces) before packing them. This allows any water that gets in where the pieces join to dry out, and keeps them hygienic as well as preventing damage. Stainless steel may pit/corrode or rust if left in water or damp conditions over extended periods, but you really have to neglect and abuse it for that to happen. If you'll be using them for their intended purpose and caring for them, it shouldn't be an issue. A lot of tableware is stainless steel, or lesser, and holds up fine, even to camping/travel. The wood portion would likely split before you'd have trouble with the metal, and if you've had wood chopsticks, you know they can last a lifetime if basic care is given.
