The Cimeter is identical to one I've used in a restaurant setting... Very solid. Wish they had the preposterously oversized version of the butcher that I can't find anywhere, but that has limited home applications anyway.

SecurityRakeThe vict butcher's knife is awesome for cutting fillets. The extra weight at the tip means all you need to do is aim and let the knife do the work. It also functions as a small machette.
