tumaruThe valve has three settings, Low, High, and Release. 1' for Low Pressure (1-8 PSI) to Cook Fish, Shellfish, Rice, Lentils, Tender Vegetables (Green Beans, Cauliflower)'2' for High Pressure (8-15 PSI) to Cook Meat, Poultry, Whole Grains such as Farro or Barley, Beans and Firm Vegetables (Carrots, Potatoes, Beets) The lid secures with the twist handle on top which is a very nice feature because it does not have to be lined up with any grooves to function properly.
